When did you first get into the pizza business?
Keith: My wife Erica and I bought Two Mamas’ Gourmet Pizzeria in January 2015. Neither of us had any pizzeria experience at that time; in fact, no restaurant experience at all. What's the pizza scene like in Prescott, AZ? Keith: In Prescott, we have quite a few pizzerias. All the national chains, plus several Italian restaurants that offer pizza. Several brick-oven pizzerias (ours is conveyer) and 1 that uses a sourdough starter. There’s a lot of variety to choose from. You have a TON of variety on your menu. How often do you introduce new menu items? Keith: It seems like we added quite a few our first year and since then, we've added 3-4 each year. Not all have stuck, but what's nice with the website and platforms is that you can introduce new items electronically without printing new menus. We use a chalkboard display for specials as well. If the item is popular and we think we'll keep it, then it goes to print. Two Mamas' is very involved in the local community. Why is that a priority for you? Keith: My wife and I feel we are truly blessed to be in the position we are in. We have a great community, a successful business, a great family, and good health. We feel that we should share what we have with those less fortunate as well as others helping in the community. Tell me about the award you received from the local Chamber of Commerce. Keith: It's called the Excellence in Dining Award. It's awarded to the restaurant in town that the chamber felt did the most for the city in donations and helping out in any way they can. We do help feed the homeless, but also feed groups of volunteers that help with different projects in the city.
